I have been contemplating building a MintyPi v3 for a while now, and I just wanted to know a few things before I start.
Is it possible to hook it up to a tv with HDMI? If so, which port do you use? (Just to know which holes to cut in the tin)
Can you use 8bitdo controllers to then play your games, preferably even the multiplayer ones?

You use the HDMI port to connect it to the TV.... There's a mini HDMI out on the Pi. Yes, you can also use the 8bitdo controllers as well.

Will the video and audio signal automatically switch to tv if there is an HDMI cable connected, or will there be the need to write a script for that? It would be great to take a MintyPi on a trip and hook it up to a tv at a hotel.

It will automatically be outputted to the TV and also be shown on the screen on the mintyPi too. You may have to rotate the screen in the config file because I believe it was inverted for the mintyPi screen.
