I would remove the VS pin from the switch. No reason to have that attached at all. Only wire EN and GND to the switch. Not sure of that would cause any issues.
You could also try to solder the powerboost output to the pi pp6 (gnd) and pp1 (5v) instead of the GPIO's.

Haha. Yeah. Got bored of building them and life got busy! I still mod and repair original gameboys though. And this hobby has taught me a lot about electronics, soldering etc that I can now use in lots of other projects!

Best to reach out to kite. And ask for the specific screen used. He may even has replacements available to buy himself.
I think these are the screens though but I am not certain.

Yeah. Should be good. As long as the positive and negative (red and black) of the battery match the kite board orientation. The JST can only plug in one orientation. So you'll be able to tell if the wires match.

Even if discharged it will still show some reading.
The main thing to worry about it that's the JST battery connector is matched with how the kite board wants it.

Have a look at kites board. It should be labelled with positive and negative for the battery connector. Inspect the dextech battery connector and make sure red matches with positive and black with negative. You can also confirm with a multimeter on the battery. With the multimeter set to DC voltage,...

Easiest solution. Get a pi zero W. Other option you'll need to get some sort of wifi dongle to add wifi, then add ROMs and install the scripts. I would get the pi set you before you put it in the GPi in that case. Or download a pre made image so you don't need to install the scripts. To add ROMs you...

Yeah I think those 51 pin screens are hard to come by nowadays. Last I checked all I could find were those 31 pin ones you mentioned.
You could grab an original gaboze round 1 board which uses an 18 pin 2.4" ili9341 screen. Easier to find for sure.

Yeah I have those connected. And have you confirmed that the connections are not bridged on the pi side? They are very close together and easy to bridge.
