Not sure how Kite did it, but one possible solution... That ribbon cable connects to a PCB inside the joystick. Speaking of Youtube videos, meant to post this a while back, but forgot.
Ben Heck installs an LCD on a Raspberry Pi using GPIO - no HDMI or composite required. It lets you lose the HDMI or Composite driver board (saving space - and cost, since you can just get a bare board)
