Getting 5.2v off red/black from a cut usb cord connected to the raspberry pi zero. I'm also get 5.1v off the red/white. Does it even matter which one of those I choose if I'm just using it to power a display?

I noticed there's some fluctuating values if I select another setting on the multimeter. That reading fluctuates between 0-14.3 on red/black and 0-6.1 on red/white. I don't get any readings either way on white/black and there's a green one I have not tested.
I am going to try red/black if I don't hear anything here.
Does it matter which of these I use as power (no data)?

First, please try to use short topic names, not complete sentences.
Second, if i get you right, you are measuring 5V and Data cables?
