It more than likely will not be restocked. The screens that were being used for that project are no longer being made in the capacity they used to be. Since they are not as widely available, the prices for the screens have gone up. In saying that, if Helder was to do another batch of the V3, he would have to raise the price of the kit significantly which he does not want to do.
With the recent release of the mintyPi Lite, you can still get most of the experience of the V3. The playability of the Lite is the same as the V3. The differences are as follows:
5/1/20 EDIT: Helder has said on Discord that he is waiting on a couple of test screens to test out. It will be a while but there may be hope.

- 2.4 in screen instead of 2.6 in.
- The halls sensor has been removed. (You can't close the lid to turn off the device.)
- There is a power switch like previous versions instead of a power button.
- The headphone jack has been removed.
- You have options of which LiPo battery you can fit instead of using the official battery. (The kit comes with a connector so that you can still use the official battery sold by Helder.)
- A little more soldering is involved.
