We have a bunch of the correct JST connectors and are planning to make a small extension to the cable running between the Powerboost board and the battery itself. (For safety etc.)
How the hell do you connect the ends of the cables coming from then LiPo battery to the tiny metal connectors that sit inside the plastic housing of the JST connector thing!? It's so tiny.
Any advice? Are you able to just link up the cables coming from the battery to another cable and solder them together to make shift an extension? Or is this too dodgy when working with a battery?

You solder them to the connectors...
This should help explain and show how to do this...
It is a bit fiddly at first, but practice makes perfect
But as you already have wires with jst connectors on them...
Just join/solder the two together...
Providing the join and the solder is good then you should be fine (use heat shrink)....
