Use PiTFT and keep HDMI out? (RP3 in GBP)

I'm hoping someone can help me with this before I break warranty on some components.
I'm attempting to build an RP3 into an old Gameboy Pocket my sister had laying around. My goal here is to add a single joystick, use the largest screen possible (which seems to be the 2.8" PiTFT Plus from Adafruit, and still have access to HDMI out.
The problem I'm running into is that the drivers for the PiTFT Plus wreck HDMI out to a display. I can either have a completely black PiTFT or have HDMI-out. Does anyone know if it's possible to get both working?
As it stands now, I have one LG display that will actually display ES when I plug in the modified Pi (stepped down to a horrible resolution), but I can't even get command line access to it that way, as it pops up with a weird message (something like "Map: 1>0b" or something).
Please let me know if anyone has actually managed to use a PiTFT from Adafruit and kept HDMI out.
