I actually took an entirely different approach, I'm not skilled enough to figure out the i2c stuff. If you manage to figure it out though you should definitely share it with the forum! I think it would be super useful to everyone looking to use less wires :)

That is not really multiplexing, it is a standard used by lots of electronic chips to communicate, pretty much like SPI, there is GND, +5v and two wire for data.
