How deep from the surface are the tracings running? I've sliced up those channels pretty deep (I think), but not sure how to test if I've completely severed the connection. Are they just thin, surface tracings with almost no depth?

Pretty much yeah, very thin! You can check by multimeter in resistance (beep) mode and on end of the soldered pad and the other on CC1 or CC2 .. there is actually a test pad on the board (other side though). When cut there will be not connection.

Visually speaking, is the picture below correct on which points you are saying needs to be tested in Beep mode?

Went back and tested this and found a couple boards where the tracings were actually not severed fully, so this was a tremendous aid. You might want to add this testing instruction to the Digital Volume Control page on your github where you talk about trimming the tracings.
