The sticks have 6 pins, 4 of which are connected in pairs. I connect GND to ground, VCC to VCC and the outputs to the analogue inputs on my pro-micro.

Did you get it working? I can't seem to get mine to work at 5v, even when bypassing the regulator.
EDIT: Got it working, just had to connect it to SW, not BST.

I made this schematic for a pi3, but you can just replace the PP pads with the outputs of your low pass filter (except ground). You'll need two low-pass filters connected to two PWM sound outputs for stereo sound by the way.

Unfortunately not, the Pi's video chip only supports one kind of video output at once, and can't support multiple monitors.

How are you going to make the hinge? If you are going to route the cable through the hinge you'll have to make a hollow inside the hinge axis.
