Have you tried the just with the Pi, and no screen? If you have Discord, send me a PM. I can respond quicker.
If you have a multimeter, please turn the switch to OFF and measure the resistance between EN and GND on the Safe Shutdown PCB. It should be around 500-1000 ohms.

I just tried with the screen completely unsoldered, it's the same result : pi shutdowns completely, powerboost stays powered.
I found a multimeter and without power plugged and switch off : resistance value is moving a few seconds and stabilizing around 1.9 M ohms. Far not between 500 and 1000 ohms...
I made the same test with power plugged : I've got a zero value, and it's making the powerboost to reset.
What do you think about it ? Maybe it's the point ?
I'll create a channel on Discord tonight (around 08h30 pm, Paris time). I'll send you a PM to join, if you are available of course.
